Trash Fish!....hardly! Carp are the most hunted fish with archery tackle in the USA and every year tons are thrown to the waste pile. Darn shame really The europeans have eaten carp for century's and it is a very good white meat with large stores of protein. Our own Carp are a European variety and are not native to North America. So how did they get here? It was for the very reason that Carp have a fast growth rate and have great food value. Our own dept. of defense was asked to find a food source that was renewable , fast to replenish and had a high protein value. (This study was done because of the fear of food depletion during a time of war.) All things were looked at , from agriculture to live stock and the Carp was chose to be the best candidate to cover all desired areas of need. The reason that people don't like carp (most times) is because of our own water sources. It stinks! But....fresh moving water with a stony bottom provides great flesh for the table. Spring time also offers better food from lakes as the silt created by vegetation has died off and the carps diet has improved alot. Check it out Try whackin' some carp in the streams this spring and cook up some filet's.

I fillet them and steam them in lemon water then , just before they flake I broil them with a little lemon pepper sprinkled all over. If you coat with a little melted butter before the lemon pepper you will get a nice tan color which will be appealing on the plate
