I grew up eating carp... Folks seem to find this strange sounding some times, but I always thought them a fine eating fish. I was always told that when you clean carp, make sure you cut out a white chord that runs up the side of the fish... Otherwise they can taste like mud. So, the way we always did it, was to gut the fish, then skin the fish. (Grab it by the head and pull the hide off with pliers.) Once the hide is off, you will see dark meat runs down the middle of the fish. cut a "V" down the middle of the dark meat running head to tail, just above the backbone, you will find this white chord. Remove it, from gills to tail fin. Lop off the head and fins! Drop an egg in a pan, get a dish of flour, dip the fish in the egg and then coat with flour or corn meal. Salt and pepper to taste, drop in a hot skillet. Don't over cook! Big carp have easy bones, not like suckers at all! Yummy! We used to take them with spears at the base of a small dam in the Kishwalkee River. To many rocks for arrows!
