I usually eat what I kill, but I just cant eat a carp. to me though, they are the same. if not worse than a 'yote. they are a non-native fish that destroys the beding and eggs of native game fish. they will over run a body of water and ruin a lot of native fish, if given the chance.

But they were imported for food stock prior to W.W.1 Bad fish Yes....good food YES Just have to keep they in clean water for a few days prior to preparing for the table

Ughh, I dont know about the water in New york but here in michigan the carp dont taste good. I caught one, didnt believe my dad they tasted bad and cooked one over a fire. Gross!.
I am not doubting you BT but I am not sure I could bring myself to do it again.
Plus I rarely eat fish, because my school serves fish on fridays ( catholic school) I have gotten food poisoning twice. Sort of scarred me.

coca cola - I have been food poisoned twice and it ain't fun! Both times was in fire camp, and both times I think I could trace the nasties to the mayo or tarter sauces. I used to watch guys get sick all the time eating their sandwiches on the fireline; I'd eat the same sandwich (well - ok it looked the same - but they weren't chewing on the other end of mine!) without mayo on the hamandcheese and be just fine. I'd suggest laying off the tartar sauce with your fish on friday's!

I may try carp this year, but I wuldn't eat too much. The reservoirs down here have pretty high levels of mercury and other toxins.

Like Mac says...hard to do after you arrow them but if you catch them and have a fresh water tank to put them in , they will be good in a few days time What one guy in this area does is put them in a horse troth for a week and then starts grabbing them out whenever he is hungry. I can assure you that NY lakes bottoms are no better than where you are The lakes here are the poorest I have ever seen in my life although we supposedly have some of the cleanest water Not sure how everything concerning plant life dies in such clean water but for the most part , our water in this area is little more than death warmed over.
