A friend sent me this recipe and I though I would pass it along and see if anyone has tried this dish.
Ghost
Roasted coon and Yams
~ 1 coon, dressed ~ 2 red pepper pods ~ 1 tsp salt ~ 1/4 tsp pepper ~ 1/8 tsp sage ~ 2 tbsp lemon juice ~ 4 large yams, peeled and quartered ~ 1/4 cup brown sugar ~ 1/2 cinnamon ~ 1/8 tsp ginger
Place the coon in a large pot with the peppers. Cover with water, bring to a boil. Reduce heat and simmer for 1 hour.
Remove coon from the pot and place on a rack in a roasting pan.
Pour the lemon juice on the coon. Sprinkle on the salt, pepper and sage.
Place the yams in the pan around the coon. Add 1 cup of water.
Mix together the brown sugar, cinnamon and ginger. Sprinkle on the yams.
Cover and bake at 325 degrees for 2 hours or until the meat is crisp and brown.
Transfer to a serving platter.
Serve and Enjoy!

We used to have a coon roast every year for the fire fighters. Good stuff indeed!

We used to have a coon roast every year for the fire fighters. Good stuff indeed! Adult coon or young? Ghost No idea! All I know is that we went down to the firehouse once a year for the coon supper... It was good but the bones were a bit different from chicken!

I have a neighbor who has been after me to get her a coon. I have never tried it but I would if it were put in front of me. However.....there is no way my wife is going to allow me a coon in the house ;D Little girly girl

I have had coon before and it's quite good.
My mother even said she really liked it the times she had it.......until my grandfather put the whole carcus on the dinner table and carved it like a turkey!

I had it for the first time in february. It was roasted whole in big pan. It was cooked to be a little spicey but man I couldnt beleive it was so good. The only thing i didnt like was when the old tomer sucked the brains out of the skull. That caused me to stop eating my raw oysters and take a walk outside in the fresh air!!!!!!!!!!!!!

The recipe sounds good may need to. I think I would want a young one in the fall or early winter though.

hmmm............ I have skinned many many coons, and I dont believe I would ever eat one. Very fatty animal Does it really taste good ?

hmmm............ I have skinned many many coons, and I dont believe I would ever eat one. Very fatty animal Does it really taste good ? I beleive that is why the recipe calls for boiling the coon before roasting it, to reduce the fattiness. I'll try it someday. But today is not that day. ;D ;D ;D
