I would boil it first and then roast it. Yeah, it is good. Depending on how you cook it, my grandfather cooked it so it tasted a bit like lamb.
Now I will NEVER again try Porqupine. That was just NASTY

My grandfather said he had one porcupine and it was excellent. Of course ...he did say that this was during the depression and the family hadn't eaten in something like 10 days

Of course ...he did say that this was during the depression and the family hadn't eaten in something like 10 days I have an uncle who loves porcupine but he says it has to be one that is living and feeding in the poplars or similar trees and not one the feeds on spruce/fir I have to admit that he had unusual tastes though as his idea of a bologna sandwich was a thick slice of bologna between two slices of bologna ;D

Of course ...he did say that this was during the depression and the family hadn't eaten in something like 10 days I'm not saying you couldn't make it taste good(especially if you were REAL hungry) but cubing it and rolling it in flour before frying it i a skillet is not the way! Even if i was hungry I think I'd try frying my boots first!
