I was not fortunate enough to take a bear this month, but since I was the airport taxi, I ended up with a bit of bear meat from some of the other guys.
Bear meat tastes great. A bit like beef, but it must be cooked well done and the fat tastes like hell. This leads to two problems. If you cook a bear steak well done, it is tough and dry. The meat also has veins of fat that run through the meat, so trimming the fat off of the outside doesn't get it all. If you crock pot it, fat seeps from the meat.
I wanted to try something different. We were having friends over for lunch last weekend so it was a perfect time to test my new dish.
We were making quesadillas. My wife prepared the vegetables and grated cheese. I sliced the bear meat into thin pieces about an inch wide and a few inches long. Careful to remove all fat. I then made a marinade for it.
I used enough salsa to cover the meat, added a spoonful of apple cider vinegar, a little chili powder, a dash of ground red pepper and some cumin. It was all to taste, no real recipe. I then put it all in a zip lock with the meat. After letting it soak for a while, I cooked the meat well in a pan with a little olive oil. We then made quesadillas with the vegetables, bear meat and cheese. They were great and our 5 guests thought so as well. By cooking it this way, I found a way to cook the meat well without making it chewy and away to discard all the fat.

This is a real good recipe for the simple reason that everyone is always (seemingly) looking for a way to cook bear meat. Very few recipes that I have come across, so this one is welcomed. Now I have something to recommend from a reliable source

I think you could use bear meet in any kind of stir fry with any kind of marinade. The key us thin slices with no day or grease. I'm thinking more of a teriyaki flavored one with rice next time.
