Here are the ingredients: ____________ 1 small onion 1 can kidney beans 6 cloves garlic 5 dried whole hot peppers 2 plum tomatoes 1/2 link smoked sausage 2 breast chicken 6 sweet peppers or 1 yellow bell pepper 2 tablespoons Cajun seasoning 3 chicken bouillon cubes 2 cups (or more) of shrimp 32oz. chicken broth 16 oz. water (or a bottle of beer) 16oz. rice (not instant) 6 tablespoons olive oil ______________ Chop up the peppers and onions and add to the pot, along with sausage (I like to thin slice mine about 1/4" thick) Add the oil and spice along with garlic (minced) after everything has cooked up (maybe 5 minutes on high) add the chicken cubed. Cook this mixture for 8-10 minutes and then add your chicken broth and bullion cubes. Cook another 8-10 minutes. Now add the water, rice, kidney beans and hot pepper. Cook around 15 minutes Add tomatoes and shrimp. Stir constantly to keep rice from sticking to bottom of the pan. You are done when it is thick and just a bit watery. remove from heat and cover. serve after 15 minutes... when rice has absorbed all remaining moisture. The concoction should be thick like a bowl of stiff oatmeal that you would have for breakfast.
