Apple onion sausage

Just made a great apple onion sausage!
15 lbs. ground deer
2 lbs. onions
5 lbs. apples
2 table sp. Kosher salt.
3 table sp. sage.
1-1/2 cup home made sweet red wine. ( or cheat and buy some)


chop apples and onions fairly fine and mix all ingredients and let sit over night. stuff into casings and enjoy. If the wife likes them they can't be all that bad I love them.

Sounds great. I have a recipe for chicken or turkey apple sausage that goes great with pancakes or stuff into links and have with a sweet mustard and onions.
