Made meatloaf calling for veal with venison, turned out great:

Grind the onion, celery, garlic and carrot prior to grinding meat, set aside In large bowl combine meat egg, bread seasonings Fry i/2 of the bacon, cool and crumble, add to meat mixture Saute ground vegis on some reserved bacon grease, add to meat mixture Turn out into greased bread pan, spread remaining (uncooked) bacon on top Spread BBQ sauce and ketchup over top Cook, uncovered, for 60-70 min at 350, alongside 2 sweet potatoes Served with spring salad that included blueberries, pomegranate seeds and walnuts, balsamic vinaigrette.

I use 1/2 a pack of saltine crackers instead of dried bread.
Some Perrin's Steak Sauce is great too in place of bbq. Another is Hickory Farms Sweet/Hot Mustard.
