okay, me and Britt (my daughter) made something extremely yummy the other day.
We saw it on Rachel ray .
I swear that lady is gonna make me fat ! ;D
You can use any meat you like in this, preciutto, ham, sweet Italian sausage , any of which can be wild boar, hog, venison, use you imagination
OK start with your red sauce , you can take as much or as little time to make this as you like , use some crushed and stewed tomatoes as well as cut up some fresh ones too.
add some spices, italian , parsley, basil, garlic, again, add what tastes good to you . saute this until it reaches a nice sauce consistency.
Start some sausage of some sort cooking in a skillet or frying pan and brown till done , you can leave it whole or cut it into small slices as I did.
Now you start a pot of boiling water add a dash of salt and when it gets rolling dump in a nice bunch of Zitti noodles , or penne if you dont have zitti.
let it boil till el dente and when it is almost done (5 minutesaway )throw in some cut up asparagus with noodles
drain when done and in a large bowl put some riccotta cheese and some shredded parmasian, add some fresh parsley and basil to this and dump the noodles and asparagus in and mix up . you can addthe sausage at this point , or leave it on the side for everyone to add if they like
In a baking dish you put 1/2 the red sauce in and cover with the pasta mix and then put the rest of the sauce over the top and a few slices of fresh mozzarella and slide in the oven to bake
bake until mozzarella melts
oh my gosh this is a beautiful thing when it comes out of the oven, and smells fantastic ! I am getting hungry again just thinking about it.
