Tequila/Pepperoncini Hog
Engredients:
01. Either two large racks of hog ribs, or a large roast...even two.
02. 3 Tablespoons barbeque spice blend ( Mcormick Grill Mate "Barbeque")
03. 1/2 cup lemon juice
04. 1/2 teaspoon Liquid Smoke
05. 2 tABLESpoonS honey
Directions:
01.Sprinkle hog with 1 1/2 Tablespoons of BBQ spice blend, rub in with fingers, cover and refrigerate for 24 hours.
02.Preheat oven to 250 degrees. Combine 2 cups water, lemon juice,honey, liquid smoke, and the remaining spice blend into a large bowl. This will be your marinade for grilling.
03.Preheat gas grill to 350, place hog on grill directly over heat for 4- 10 min.
You want it well browned on both sides, with nice grill marks on the meat. Make sure to baste the hog liberally with your marinade mixture while grilling.
04.Lay out 2 or 4 (depending on how many pieces of meat), of tin foil the length of a cookie sheet, or baking pan, whichever you may have, and place one sheet on the pan. Place one rack(or roast), on the sheet, pour some of the marinade over the hog, so that you have some pooling up around the meat. Cover it with a second sheet, and wrap securely. Bake in the 250 oven for 2 1/2 hours.
01. Heat 2 Tablespoons olive oil in a medium skillet over medium heat. Add about 3-4 chopped Pepperoncini, 2 tablespoons chopped garlic, and 2 tablespoons chopped shallot.
02.Add 2 cups of ketchup,1/2 cup Tequila (Cuervo Gold),1 cup mollasses, 1/4 cup of cola.Mix well.
03. Stir in a 1/4 cup of brown sugar, 1 teaspoon of Liquid Smoke, 1 teaspoon of Paprika, 1 teaspoon garlic salt, and 1 teaspoon of the BBQ spice blend.
04. Cook and stir until sugar disolves, and the sauce thickens.
Note: At times I will cut the Brown Sugar to a tablespoon, the Mollases in half, and delete the cola if I want to lessen the "sweetness" of the sauce....and of course use more Tequila!..lol
And finally, serve the hog on a large plate with the Tequila/Pepperoncini sauce over the top.
