VENISON CHILI
INGREDIENTS:
01. (2) CUPS CHOPPED ONIONS
02. (1) TABLESpoon OLIVE OIL
03. (3) CLOVES GARLIC
04 (1.5)GROUND CHOP MEAT (VENISON)
05 (1/2)LB. LOOSE ITALIAN SAUSAGE MEAT
06. (2) CUPS ASSORTED PEPPERS (DICED)
07. (2) TABLESpoonS CHILI POWDER
08. (1) TEASpoon OREGANO
09.(1/2)TEASpoon THYME
10. (1) TEASpoon GROUND CORIANDER
11. (1) TEASpoon GROUND CUMIN
12. (1) TEASpoon SALT
13. (12) OUNCES CORONA EXTRA
14. (2)CANS(14 1/2 OUNCE EACH)ITALIAN STYLE
STEWED TOMATOES (DELMONTE)
15. (2) CANS (19 OUNCE) RED KIDNEY BEANS (PROGRESSO)
16. (2) CAN (19 OUNCE) BLACK BEANS (PROGRESSO)
1.SWEAT ONIONS IN OLIVE OIL FOR 5 MIN.
2.ADD GARLIC AND STIR FOR 1 MIN.
3.ADD MEATS AND BROWN
4.STIR IN PEPPERS,SPICES,BEER,AND STEWED TOMATOES.
5.BRING TO A BOIL,LOWER HEAT AND SIMMER FOR 1 HOUR.
6.MAKE SURE BEANS ARE DRAINED AND RINSED / ADD BEANS AND LET SIMMER FOR ANOTHER 45 MIN.
This is the final product. Let it set in the fridge overnight, and it will thicken up considerably. I find that if you freeze it in portion size containers...a little wet, it defrosts better. Just drain it to the consistancy that you like.
