This is pretty much the way I do Partridge. He is filleting this Turkey and no doubt that is the better way to do it IMO Same with Deer...no guts or blood....very fast and neat.

Take the wings off, and dip the whole bird in hot water for a minute. The feathers will pluck easily at this point. Pluck the whole bird, then gut it like a store bought turkey. Cook it in an oven bag, and you will not be sorry. Use the leg meat for turkey salad.

I don't really get why he is plucking the breast area if he is going to breast it out anyway; he's half way to plucking the way it is. When I breast them out, I just leave the feathers on to take less time; but, regardless, it doesn't hurt to do it the way he does it. I pluck 'em every once and a while, but most times I just breast them out for strips, nuggets or grilling, and then take the legs for turkey noodle soup. One leg boiled in chicken stock in a crock pot all morning and the meat is easy to take off. Add a large bag frozen egg noodles and you have 8-10 servings by supper. Served over mashed potatoes in a bowl on a cold day and people are in a warm and cozy stupor by bedtime.

I've done it both ways and they are great either way taking only the breast meat is definitely the easy way out.

I like the fillet part!! Uses best part of wild turkey legs are just too chewy!! That is a myth Jamal!! You grind them up in mayonaise, and it's the best turkey salad ever , trust me.

Yeah, when I crock pot them for the soup, the legs are extremely tender.
