Thanks guys! I couldn't wait and decided to prepare some backstrap to see what it tastes like. I deboned everything and soaked the meat in a water, vinegar and salt solution for about 6 hours. I took out two fist size pieces of backstarp and put the rest in a bag to be frozen. I then took the two pieces of backstap and put them in a ziplock sandwich bag with some teriyaki to merinate overnight. The next day I preheated the oven to 350. Put the backstrap in a pan with aluminum foil under the meat. Covered the meat in bacon and wrapped it up real tight in the foil. One hour later I pulled it out. Dang it was goood. The meat was a little courser than deer, kinda like a beef brisket. I could taste a slight hint of teriaki but no gamey taste at all. The middle boy who is the pickest eater of all ate more of it than me. Wonder how jerky would taste?

That is a great Buck!....I wish I could have been there to witness that stalk and shoot ....sounds like he gave you some run for your money
