Depends on the size of the animal and what kind of help I have. With our coues deer here in Az I can have one in paper in the field in about 1 hr if I have someone to wrap. Then I do the grind when I get home. Takes about 3 hours for an elk in the field, once again doing the grind at home. If I bring the qtr's home to age it takes me a couple days, because I am not in a hurry and do it in the living room on the coffee table while watching TV and drinking an adult beverage. I'll do the hamburger grind 1 day, put up the steaks and roasts the next day then finish up with the sausage once I decide what kinds I want to make. Only have an hour or three invested each day, no need to hurry since the qtrs are kept cool. With my field butchering there may be a little clean-up required before I cook, when I do it at the house it is ready for the pan when unpacked.
