Nice and Easy Caribou - Required: 3 or 4 pounds of Caribou meat 3 tablesoons of olive oil 3 tablespoons of butter 1 onion Small box of chopped mushrooms Grill pan salt pepper Mrs Dash Grilling Blends (Original Steak Blend) 5 pounds of potates Milk 12 Granny Smith apples 4 tablespoons of lemon juice 4 tablespoons of butter (Melted) 6 tablespoons of brown sugar 1 teaspoon of nutmeg 2 teaspoons of cinnamon First, Apples: Halve apples, core. Place in slow cooker on low heat. Drizzle lemon juice and butter (melted) over top. Sprinkle brown sugar, nutmeg, and cinnamon over top. Cover, cook on low for 4 hours or high for 2 hours. Now for the meat: Melt the butter in a pan, add in olive oil. Slice up the onion, mix with mushrooms, add a dash of salt and pepper, sprinkle in a tablespoons of Mrs Dash Grilling Blend, pan cook until starting to brown. Remove from heat, this is topping for the meat. (Note: You can add in a couple strips of bacon all chopped up if you like) To cook the meat, rub in pan drippings both sides, sprinkle Mrs Dash on both sides, add a light pinch of salt (at least you know how much you get!) Slow cook on the grill until just rare. Remove from grill. Do not over-cook! Also note that if you cook over an intense flame, the herbs tend to burn off of the meat and you don't end up with exactly what you've expected...Don't forget the potatoes: Boil potatoes until soft, mash, add a half cup of milk, more in quarter cup increments if softer mashed potatoes are reguired. A little salt if you like, or garlic... Here we are at the start. The apples have been cooking and are just about done, the potatoes are going... So we chop up the onions and cook up the topping. As the meat is almost ready, place the topping in the microwave for 60 seconds to heat back up, grab a couple caribou steaks, cover with topping, add potatoes, and some cooked apples! Enjoy... I know I do!!! PS - Ardon, I hope you don't mind my jumping in on your thread, it just seemed like this would fit right in...
